The high-end steakhouses in Taiwan such as No. 168 Prime steak, A-Cut and Ruth Christ probably will shut the door pretty because even DPP supporters are not willing to spend NTD2500 to eat Aussie or New Zealand beef.
Only USDA Prime grade is the best beef. There are 3 grades by US department of Argiculuture. Prime, Choice or Select and Cutter or Canner. I pay $16 a pound for Prime graded rib eye and $8.5 a pound for Choice graded rib eye. The difference is that I buy Prime grade when I eat myself and I buy Choice grade when I invite guests for a BBQ. (My guests couldn't fucking tell anyway, so why bothers to double the price?)
Here is the complete way how I cook my steaks.
Marinade the steak for 24 hours and keep steaks in a room temperature 4 hours before cooking. Use fork to pierce steak before marinading them.
Here is the recipes for marinading the steak.
1. 3/4 cup of soy source
2. 3 cups of oil (any oil)
3. Lemmon juice from one whole lemmon
4. Four Gloves of Garlic, minced
5. 1 Table spoon of Rasberry wine viniger
6. Two table spoons of Lea & Perrins Worcestershire sauce
7. 1 table spoon of dried ground mustard.
Preheat the grill until it reach 500 derees. Place the steaks on grill, close the lid and cook them for 4 minutes, flip the other side and cook for another 4 minutes for medium-rare doneness.
You can buy a bbq thermometer fork to test the intern temperature
Rare - 125 degrees
Medium-Rare - 130 degrees
Medium - 140 Degrees
Medium -Well - 155 degrees
Btw, you never eat a well-done streak. You are eating steaks, not fried eggs.
Last but not least, all you need is a bottle of fine red wne and then, you can forget about the sex.
